<b>Prepare Gelatin:</b> In the bowl of a stand mixer, add ½ cup of water and sprinkle the gelatin over it. Let it sit for 5 minutes to bloom.


<b>Make the Syrup:</b> In a saucepan, combine the remaining ½ cup water, sugar, corn syrup, and salt. Heat over medium heat, stirring until the sugar dissolves. Use a candy thermometer and continue heating until the mixture reaches 240°F (115°C).


<b>Mix:</b> With the mixer on low, slowly pour the hot syrup into the bloomed gelatin. Gradually increase the speed to high and beat for 8-10 minutes until thick and fluffy. Add vanilla at the last minute.


<b>Set:</b> Grease a square baking dish and dust it with powdered sugar. Spread the marshmallow mixture evenly in the dish. Smooth the top with a spatula. Let it set for at least 4 hours.
