With fresh mango puree in both the cake and the frosting, it’s bursting with flavor. Plus, it’s a real crowd-pleaser!

Ingredients:

For the Cake:
• 1 ½ cups all-purpose flour
• 1 cup granulated sugar
• ½ cup unsalted butter (softened)
• 2 large eggs
• ½ cup fresh mango puree
• ½ cup milk
• 1 ½ teaspoons baking powder
• ¼ teaspoon baking soda
• ¼ teaspoon salt
• 1 teaspoon vanilla extract
• Zest of 1 lime (optional)
For the Mango Frosting:
• 1 cup unsalted butter (softened)
• 3 cups powdered sugar
• ½ cup mango puree
• 1 tablespoon lime juice
• 1 teaspoon vanilla extract
For Garnish:
• Fresh mango slices
• Mint leaves

Instructions:

1.Preheat Oven: Preheat your oven to 350°F (175°C). Coat an 8-inch round cake pan with grease and flour.
2.Prepare Cake Batter: In a large bowl, sift together the flour, baking powder, baking soda, and salt. Mix butter and sugar until fluffy. Incorporate the eggs individually, making sure to mix well after each one. Stir in vanilla and mango puree. Add flour mix and milk to the butter mix, starting and ending with flour. Mix until just combined. Fold in lime zest if using.
3.Bake Cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25 to 30 minutes, or until a toothpick inserted into the center emerges clean. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to finish cooling.
4.Prepare Mango Frosting: While the cake is cooling, beat the butter in a large bowl until creamy. Gradually add the powdered sugar, beating on low speed until well combined. Add the mango puree, lime juice, and vanilla extract. Beat the frosting until it’s light and fluffy. If it’s too thin, add more powdered sugar to make it thicker.
5.Frost Cake: Once the cake is completely cool, spread a layer of mango frosting over the top and sides using a spatula. Garnish with fresh mango slices and mint leaves.
6.Serve: Slice and serve your delicious mango cake, enjoying the sweet and tropical flavors.
